When I was growing up my mom always made potato pancakes; you begin with leftover mashed potatoes;
To this add one egg;
A small amount of flour;
And a little milk.
Continue adding milk until you have a thick batter.
Spoon the batter into a hot skillet;
Cook until golden brown on each side.
Serve warm.
Sometimes my mom would add leftover corn to the batter but I like them best plain.
Leftover corn, pea's, carrots, green beans :)
ReplyDeleteJohn had dinner with us one night and I'd made those.. he couldn't quite eating them, he said he'd not had any since he was a kid and his mom had fixed them.

I thought MY mom was the only one who had made these with leftover mashed potatoes! I love them. A little grated onion gives them great flavor, too.
ReplyDeleteMy goodness Patty, I had almost forgotten these. I use to make them for the kids all the time when they were growing up...matter of fact we use to cook extra potatoes just so we could make potato pancakes the next night. Seeing these has made me realize it's been too long since I enjoyed them, I think I'll cook a few extra potatoes tonight for tomorow nights supper...yum
