Leftover Baked Potatoes

Here is a fun and very tasty way to use up leftover baked potatoes.
Begin by slicing your leftover potatoes into thick sections.
Place in a greased skillet and fry until golden brown.
Seasoned with salt and pepper.
Leftover potatoes are wonderful with lunch or supper but I like them best with breakfast.

  1. I also like to "chunk" them up and/or add sliced onions. Peppers are good to add, too. I sometimes bake potatoes JUST to use them as fried for breakfast...speeds up breakfast a lot and are delicious!

  2. Try them for dinner by sprinkling on some Parmesan cheese, garlic powder and chives.. delicious!!!

  4. I was JUST about to say, these would go best with breakfast! I'm over here right now wishing I had hashbrowns!! Pamela and I can't get enough "breakfast" food now that we're back from our trip! We missed American food!!!!
