After such a wonderful day of rain and cold weather yesterday and a nice cold and wet morning today I decided to make a pot of soup while there was still a chill in the air.
Today's soup is vegetable soup; here is how I like to make it:
I began with a small roast which I browned on both sides and then cut into small bite size pieces.
I like to let the meat simmer for awhile until it is fork tender.
Once the meat is ready I add one can green beans and potatoes cut into small wedges.
I continue cooking this, adding water as needed, until the potatoes are tender.
Once the soup was ready I added slices of whole wheat bread for the finishing touch.
Oh yum, it was so good and I have enough for supper too.

Looks delicious but where's the carrots? :) I made veggie soup on Monday and still eating on it but going to freeze the rest and fix something different for dinner.
ReplyDeleteUmmm... there must be a misprint. I read that you put an "ONION" in the soup?!
ReplyDeletePS) R U copying me on blogging? I was going to post about MY veggie soup too!! Seems we are all thinking the same stuff... Tea and soup. Is winter, perhaps, around the corner?
Tee-Hee...I noticed that you also said you put that "ONION" through the blender. Could you be one of those people who can't 'eat' onions but loves the taste they give to dishes like soup, stews etc...?
ReplyDeleteGirl that soup looks so good, I'm already planning on making a pot for dinner tomorrow evening. YUM!!!!
