Mock Fried Burrito

After making salsa today I decided to try my hand at a mock fried burrito. I began by placing re-fried beans, taco meat and grated cheese on a soft flour tortilla.
Next I folded each end over the filling;
Then the bottom was folded up;
And the top folded down.
I then placed the burrito, seam side down, on a lightly greased pan and baked at 400-degrees until brown.
I was impressed with how the burrito puffed up.
The burrito was crunchy on the outside and soft on the inside.

As I was feasting on my new creation I was picturing how good pie filling would taste in the middle. The possibilities are endless; this would be a good way to use up leftovers. And the best part is.... it's not fried!

Salsa

The kids and I love to eat salsa; especially with nachos hot from the oven.

Begin by boiling jalapeno peppers until tender.
Next take one or two cans petite diced tomatoes;
And pour into a blender.
Sprinkle in some salt and garlic powder.
When the peppers are ready cut off the tops and add to the tomatoes;
Blend. If you like thick salsa blend for just a few seconds; we like ours to be smooth so I blend until no large pieces are left. Store in the fridge.

This large jar of salsa is blazing hot and will be taken to my brother-in-law's house during Spring Break. My sister says he loves to eat salsa on everything.

Bargain Entertainment

Last night on the news I heard about a book sale that was to begin today; so this morning Elizabeth and I headed to town! I found several books for me and one book for Elizabeth (I forgot to put her book in the photo).I spent $7 for my many, many hours of entertainment. In the past we used to go a lot to our local dollar theater for cheap entertainment but the last time we went it had gone up to $3 per ticket!

New Bathroom Curtains

Our one and only bathroom needs a major face lift. I would like to paint it and re-do the floor but this is a future job. In the mean time I decided to make some new curtains.Instead of making a normal fabric casing to slide the curtain rod into I stitched plastic rings along the top; they work very nicely.
Although I am happy with my new curtains I wish they had come out fuller.

Better Than a Hot Dog

The other day, after classes, Jonathan stopped by the grocery store to pick up a couple of things for me. While at the store he called to ask what we normally pay for sausage links; he had stumbled upon a great deal.
We like sausage links best on the grill but I didn't feel like making a fire for only one item. So, instead I put a little water in the skillet and cooked until brown and the water was gone.
These are wonderful with mustard on a bun. My nephew Joshua is the one who got Jonathan hooked on eating sausage links this way.

They are very rich with a strong flavor; a perfect change from a simple hot dog.

Target Practice

On Saturday Jonathan invited a college friend to come out and target practice. They shot at a gallon jug of water;Which blew up pretty good.
And they shot at a frozen 2-liter bottle of water;
Which made shaved ice.

They sure had a lot of fun!

My New Iron

Today, after church, the kids and I went to Sam's and I bought myself a new iron.I tried it out on some fabric this evening and it works nicely; hopefully it will last until I find a professional iron.
