A White Pumpkin

We were recently given a very pretty white pumpkin. (Which I cut into before taking my picture). After cutting it in half...
I removed all the seeds and strings.
Next I cut the pumpkin halves into thirds...
And placed them in a stock pot with 2 cups of water.
I covered and cooked the pumpkin on high for 15-minutes and then reduced the heat to low for an additional 30-minutes.
After it was cool I gently lifted each section out of the pot...
And scraped all the soft flesh into a bowl.
A potato masher was used to break up all the hunks of soft pumpkin and then I drained all the juice which rose to the top; this was added to the juice still in my stock pot.
The mashed pumpkin and broth are now waiting to be turned into pumpkin bread....
And the seed are waiting to be roasted.

That's one thing I can't seem to get rid of in my pantry -- canned pumpkin (purchased on clearance) from prior Christmases and Thanksgivings years ago...

At least you're eating it fresh!

I LOVE pumpkin anything. I have been wanting to make some pumpkin bread too. I have to use canned pumpkin :( But, I know if I make it I will eat it all, which would not be good! Maybe I can give some away, then I won't eat as much...
