Mock Fried Burrito

After making salsa today I decided to try my hand at a mock fried burrito. I began by placing re-fried beans, taco meat and grated cheese on a soft flour tortilla.
Next I folded each end over the filling;
Then the bottom was folded up;
And the top folded down.
I then placed the burrito, seam side down, on a lightly greased pan and baked at 400-degrees until brown.
I was impressed with how the burrito puffed up.
The burrito was crunchy on the outside and soft on the inside.

As I was feasting on my new creation I was picturing how good pie filling would taste in the middle. The possibilities are endless; this would be a good way to use up leftovers. And the best part is.... it's not fried!

I keep thinking about those too but haven't had anything around to stuff in them... I like your idea of trying pie filling.
